September 28, 2018If you’re a vegan, you’ve probably spent a lot of time staring at menus, trying to figure out what you can order. Princess Lipscomb noticed the lack of restaurants on the Peninsula catering to vegans, so she took her love of cooking, developed a business plan, and opened Vegan Cooking Today in March of this year.
Located at 12638 Jefferson Avenue (Suite 15), Vegan Cooking Today is the first exclusively vegan restaurant on the Peninsula. It is a strictly vegan restaurant, meaning that no animal products are used, including meat, dairy, and eggs. That doesn’t limit the restaurant’s menu options though! Vegan Cooking Today has over 280 items on the menu in a wide array of styles, with everything from Ethiopian, Italian, and Moroccan to International and Soul Food.
In addition to serving walk-in customers, guests can pre-order meals online up to seven days in advance. They also offer catering services and recently added a food truck, which serves lunch three days per week at Newport News Shipbuilding. Princess plans to continue to grow the business by adding vegan yogurt and ice cream to the menu and serving breakfast several days a week. She also hopes to start a local delivery service in the future.
Vegan Cooking Today’s motto is “Just Try it” and they encourage guests to open their minds and palates to new foods. They offer meal prep classes to introduce people to vegan options and youth classes are available for kids as young as six.
